Colin came up with this recipe after experimenting a bit, while on a diet that emphasized whole grains and low fat. Each cookie is about 67 calories, with 20 calories from fat. That’s around a quarter the calories and a fifth the fat found in Mrs. Fields’ cookies, and everyone seems to like these pretty well.
1 cup rolled oats
3 tablespoons (3/8 stick) spread or butter
½ cup brown sugar, packed
¾ cup white sugar
¼ cup egg substitute
½ teaspoon vanilla extract
1 teaspoon baking soda
1 cup whole wheat flour
½ cup chocolate chips
Chop the oats in a food processor until fine (like a coarse flour), and set aside. Cream the spread, the brown sugar, the white sugar, and the egg substitute together, and then add the vanilla and baking soda. Mix in the powdered oats and flour, and finally add the chips. Drop walnut-sized balls on a baking sheet with a spoon, and then bake at 375° for 12-14 minutes. Makes about 30.
