Pecan Brittle

Pecans
½ pound butter
1 cup sugar

Lightly butter a square 9x9 pan. Spread pecans on bottom of pan. Cook butter and sugar in heavy pan. Stir all the time it is cooking. Cook until light brown in color and starting to smoke. Pour over pecans and let cool. Break into pieces.

This needs to cook over medium to medium-high heat, and could take twenty to thirty minutes of stirring and vigilance. The candy should just get to hard ball stage on the candy thermometer if you have one - do not let it sit and smoke, haul it off the stove and quickly pour it on to your prepared pan full of pecans immediately, scraping as you do it.

I found that giving the pan a couple of fast spins on the counter right after pouring got the candy out to the edges, or near enough.
